That's not strictly true anyway. Harry will always be royal by virtue of the fact that he'll be the son/brother of the king. He'll also always be the Duke of Sussex, and therefore she'll be the Duchess. They will always profit from these associations and titles whether they actively seek to do so or not.
All that will happen is that they won't be able to call themselves 'HRH' and they won't be funded from the palace. Neither of which I suspect will bother them particularly.

I think it all comes down to the fact that Harry and Meghan want the freedom to support their own charity work without mundane and futile royal duties wasting their time. They wish to stay part of the family whilst doing their own thing. This is understandable to me, and considering the chap is 6th in line for the throne, his importance in the family is becoming less so as the days go by.

Let’s have a think. The Queen’s father had two children. The Queen's sister had two and she had four. Those four children had two children each. Of her eight grandchildren three have issue. William has three and will probably have no more. Peter Phillips has two and, aged 40, will probably have no more. Zara Phillips (Tindall) has two and at 37 and heavily involved with the horsey world perhaps will have no more. Harry has one. The remaining four Beatrice (29 and not long married), Eugenie (28 and about to be married), Louise (14) and James (10) are as yet without issue. That, I would suggest, is hardly akin to the breeding habits of rabbits. This, however, might be nearer to that mark:

They can then conduct their lives as the other six of the Queen's grandchildren whom I have described above do. But they should have had the good grace to inform their father and grandmother before running to the TV cameras. Whatever job you do, you keep your employer informed of your intentions (if you have any manners, that is).

It's not an uncommon situation though is it? Ultimately I'd expect anyone in the same position to prioritise the needs of his wife and child over those of his Dad, Brother and Granny. That's what I'd do anyway.

Some posters are speaking of Harry as if he was some kind of martyr; no one can choose how they are born or what they are born into. Many have crosses to bear & just get on with it, the issue is how we do it.

It wasn't quite that simple though was it. They all knew of his intentions. He was just told to hold back on any announcement until they'd all met, and then the meeting was put back - by interfering courtiers it seems. Something that seems to have prompted the admittedly rather petulant action.
