I've just been given a couple of birds (shot yesterday). They will hang til the w/e and then I shall cook them.

I was thinking of doing a ravioli with the hen bird and a gamey chocolate sauce. I could roast the cock, but often they can be a bit dry.

What is your favourite way to eat pheasant? (Yes I am looking for ideas).

I'm off out in a bit, but will return to this thread.

I`d do some sort of pot roast. Maybe with port or masala.
Sorry, I meant marsala.
This may not be to everyone's taste BM but it's a bit different.

Why don't you mince the meat and make a ragu with it and turn it into Ravioli?
My mother used to hang pheasant in the garage for several days. Apparently it’s better when it’s going off a bit. Don’t know if this is true but worth checking out.
