Last week I was issued with a parking ticket, I was 7 minutes late but the Traffic Warden filled the ticket out stating that I had a Winnebago when in actual fact I own a Vauxhall Astra. Can I appeal against this?

yes, appeal, as the parking ticket is only valid if all the details are correct
But if you know you did wrong why would you want to appeal?

I don't know what a Winnebago is or whether it is like an Astra.  You can't really claim the ticket was issued to another car if you have got it and are querying it.  If a mistake has been made on the ticket, they would just have to be sure to get it right if they later issued a summons.

winnebago is generally a huge motorhome that the hollywood stars like to live in when filming....its a little itsy bit bigger than a astra really!
There is a definite difference between a Winneago and an Astra, so I would certainly take this to court.  Who knows, someone may have taken a ticket off their own windshield and placed it on yours.  Many a case has been dismissed because of just such a minute detail, so I'd persue this if I were you.  Good luck.
I think twiglet is correct,ALL the details have to be right or the ticket becomes void. Even though the car reg no may be yours,how is the appeals dept to know WHICH vehicle i.e Winnebago OR car reg no E345ABC was at fault?
I know someone who got off paying a parking fine because the traffic warden had misspelt the name of the street the car was parked in.  This guy's argument was that there was no such road so how could he have been parked there! 

I cannot believe a warden would mistake a Winnebago for an Astra.

I think we must therefore presume it was done deliberately so you could appeal and have the ticket quashed whilst still allowing the warden to meet his daily quota.
