I have a pumpkin, orzo pasta, lardons, walnuts all the usual herbs and spices, feta cheese, cream cheese, cheddar, onions, courgettes, peppers.

Any ideas?

200g orzo pasta

200g pumpkin, diced

100g lardons (bacon pieces)

1 onion, finely chopped

1 courgette (zucchini), diced

1 red pepper, diced

50g walnuts, roughly chopped

100g feta cheese, crumbled

50g cream cheese

50g cheddar cheese, grated

2 tbsp olive oil

2 cloves garlic, minced

1 tsp dried thyme

1 tsp dried oregano

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Instructions:

Cook the Orzo: In a large pot of salted boiling water, cook the orzo according to the package instructions until al dente. Drain and set aside.

Prepare the Pumpkin: In a large pan, heat 1 tablespoon of olive oil over medium heat. Add the diced pumpkin and cook until tender and slightly caramelized, about 10 minutes. Remove from the pan and set aside.

Cook the Lardons: In the same pan, add the lardons and cook until crispy. Remove and set aside, leaving the rendered fat in the pan.

Sauté the Vegetables: Add the remaining olive oil to the pan. Sauté the onions, courgette, and red pepper until softened, about 5-7 minutes. Add the garlic and cook for another minute.

Combine Ingredients: Return the pumpkin and lardons to the pan. Add the cooked orzo, walnuts, thyme, oregano, salt, and pepper. Stir to combine.

Add the Cheeses: Reduce the heat to low. Stir in the cream cheese until melted and well combined. Add the feta and cheddar cheese, stirring until melted and creamy.

Serve: Garnish with fresh parsley and serve warm.

I was just curious to see what it comes up with, I hadn't used it for that.  I promise to always mention AI if I've used it on AB. 

You could make a 'risotto', using orzo instead of rice.
