I hate to interrupt the arrangements for a romantic tryst, but the phrase has beeen in use since the 1700s to suggest brisk, fast-moving selling. The idea presumably is that the customers are literally shouting for the seller's attentioon in order to acquire his product. In modern times, think of the trading-room at any stock exchange. There, you will see exactly what is meant by "a roaring trade"!
