What is a sable, or rather the sable she is referring to in the song? I looked it up and I came up with an oversized over furry rat - is there another meaning?

Yep, as mycats says, it's a coat/cape made from sable fur - on a par with mink.

Sable is deliciously fine soft fur, not terribly long but very dense and lovely, not at all rat like!!!
