Spinach Specials.

Recently, BBWCHATT suggested that we try scrambling spinach with eggs. We did and it's delicious.

This evening we had for our meal, minted lamb chops accompanied with roast pots, carrots, peas, spinach and gravy.
As an experiment, the chopped/frozen spinach was put into the microwave for 3mins and then mixed together with some mayonnaise, a little salt and ground pepper, together with a liberal sprinkling of garlic granules; then put back into the micro for a further 3mins.
We enjoyed it. Have you any special ways of cooking spinach.?

Promise me next time you will try it just this way. Break the eggs into a bowl and whisk them for a minute or two - dump some of the frozen chopped leaf spinach in - no need to microwave - whisk for another minute. Put some margarine/butter into a frying pan - let it melt - pour in the mixture. Scramble as usual. Salt to taste. They are PERFECT without another thing - but they are good other ways too:)

lol to you as well BBWCHATT. In a way we did cook similarly to your method but admit to having microwaved the spinach for a minute and then scrambled with eggs in a saucepan.
The packeted frozen chopped spinach we have in the U.K. comes as small moulded block pieces ( oval inches or thereabouts) and take quite a while to defrost. Perhaps it is packeted differently in the States.
We are now thinking about spinach omelettes as a possibility........V & R .( Spinachers!!!..we hope not. )

Viv & Ron - NOW I understand - we have those little boxes of frozen spinach too - but we also have them in frozen plastic bags - I just bang one of those on the counter until it is in spinach crumbles and then cut the end of the bag and shake out the amount I want.
Spinach omelets are good too - and good with a little mozz cheese on them.
Also if you put frozen spinach in the microwave with a little margarine and cook it for a while.
Serve it with hot buttered white rice and a steak or pork chop - that is my very favorite home made meal !!!

You have intimated that spinach is an excellent veg and we agree. There are occasions when we have uncooked full leaf spinach as an addition in sandwiches for mid-day lunch.(Better than lettuce leaves.)

Hi Viv & Ron - I saw on another question that you have never seen smoked sweet paprika - it comes in sweet and hot - my favorite is smoked sweet paprika:

BBW.....Blame me for thinking that Smoked Paprika is not on retail sale in the U.K.
Viv suggested that I should look further into the matter and I have discovered that 'Barts', whose products we have bought in Swansea City (6 miles away), have the spice listed.

As we don't often shop in the city for food (Supermarkets are on the outskirts and we have a shop in our village) I am now thinking of stocking-up with herbs and spices 'on-line' from Bart's.(�15...free of postage!)
