The 'n' comes from the last letter for 'brown' (3 letters) which follows a word for a band of (perhaps) sticky stuff.

Many unusual words today.
No one seems to have figured out how to do that transformation in real life.

Yes, there are quite a few obscure words in this one, hankir but at least they've been generously clued by Quixote (no really obscure wordplay to compound the problem).

I've tasted some that appear to have been transformed in the other direction!
