We are talking about Porsche cars but my friend wants to talk about golf so he brings Volkswagen into the conversation and then the golf and onto Golf the sport So is there one word for that

I don't think "segue" really describes what is going on there.
Your friend is cleverly manipulating the conversation to bring it round to what he wants to talk about. I think "segue" is sometimes used figuratively to describe a smooth change of topic, but that would be one person doing it on their own.

Also if it has to go through several steps before it gets to the change desired, it isn't really 'smooth' is it? Very clever though!
