4oz plain flour
1/2 teaspoon bicarbonate of soda
1/2 teaspoon cream of tartar
1 tablespoon sugar
1 beaten egg
1 cup of milk
Sift the flour, soda and cream of tartar into a bowl.
Add the sugar, then gradually add the beaten egg with the milk to form a thick batter.
Grease the griddle with a little (olive) oil.
When hot enough drop the batter a spoonful at a time and cook until bubbles form on the top.
Turn over and cook on the other side.
This is a recipe my sister gave me donkey's years ago and always works out fine.
