In English, usually we pluralise an item by adding the letter 's', eg. dog, dogs. But I read a quiz sheet (which didn't have any answers) which claimed that there is only one word in the English language which is singular with an 's' and is made plural by removing the 's'. Does anyone know the answer?

The answer is sheep, deer.
A female millionaire is a millionairess. Drop the S, and you've got millionaires, plural.

Has ginbottle been at it, do you think?

CORPS, CHASSIS, BOURGEOIS, RENDEZVOUS, PINCE-NEZ, FAUX PAS, GARDEBRAS, PRCIS; these don't require an extra 's', nor 's' taken away. So these don't fit into the formula. So who is correct, gazzawazzas or allan ivesss?
Alright gazzawazza, so you don't rate my millionaire.

How about princess, princes, then?
