I put mace, but this is a true "Katie"!
I've gone for Mace too. But I'm still hovering and could change it :-)
On second thoughts, Mace is a spice, not a herb.
I have looked up Mace and Sage on Google. According to the write-ups Mace is just a herb but Sage has culinary and medicinal properties. It is also antiseptic.
I think its SAGE, from the Latin SALVIA "Healing plant ", from Salvus " Safe " quoted from the Concise Oxford Dicctionary.

I put SAGE .
I'm sure mace is a spice, while sage is a herb.
