palett cleanser such as sorbet after main course but before pudding.

Also a single item of fruit. In the strictest sense should be served with a bowl of water to wash it in AND a fruit knife and fork to eat it with.

I may be wrong here, as fashions and etiquettes change in polite society, but I believ,e as I have said, PUDDING is the chosen term for dessert nowadays.
