In a vacuum it is not the lack of gas that halts metabolism, but the lack of pressure which causes all water to either vapourise or freeze. 'Vacuum packing' is more correctly called 'Shrink Wrapping' because air is removed but the pressure and temperatures are ambient enough for rotting.
