Make your own, Delia/Nigella stylee, with or without orange/port? Frozen berries or fresh?

Stinks the place out, can't we just have redcurrant jam with the bloody roast?

my late uncle maurice used to make butties out of cranberry sauce.
I make my own, but I have too much time on my hands. If I got suddenly busy in the 3 days before Christmas when I do all my prep and shopping it might be different, but I tend to tell Chambers that I won't work unless it is one of my specialist jobs or an urgent ongoing case.
I can't stand Cranberry Sauce. I get Blueberry Relish from a nice little Deli when I go visit my parents in Hereford. It's amazing with poultry.
Mum makes her own cranberry sauce, Delia-style, with both orange and port. She uses fresh cranberries. We have turkey, lamb and beef on Christmas Day so we have the redcurrant jelly and horseradish sauce to go with it all too. Personally I love home-made chilli jam with my meat so I have that instead.
NoM - where are all these fancy shops you go to in Hereford? Is there a big chunk of the town centre that I don't know about (admittedly, I have only just discovered the row of shops to the left of M & S).

The Blueberry Relish is on sale in a little Deli in the Mews just off St Owen Street (next door to Taylors Pharmacy).

Cheers NoM, I have only been to town on my own ONCE but it was chucking it down so didn't do any browsing. Now that the beautifuls are all in school I have to find ways to fill my time (did you know that Hereford has four different kitchen stuff shops?).

100g light muscovado sugar
100ml orange juice , fresh
optional - can use the orange peel and caramelise and chop into fine strips
250g pack fresh or frozen cranberries
chopped red chillis (or flakes)

Tip the sugar and orange juice into a pan, then bring to the boil. Stir in the cranberries and chillis, then simmer until tender but still holding their shape - this will take about 5 mins if using frozen cranberries or 8-10 mins if using fresh. Add caramelised orange peel.

The sauce will thicken as it cools. Will keep in the fridge for 1 week. On the day, bring to room temperature before serving.
Yes! Fresh cranberries and orange juice. Lovely with Christmas Dinner, great with cold meat afterwards. So easy.

Too much of a faff. But there's a book by Escoffier here that tells you how to make turtle soup, beginning 'hold the turtle head down...', only prefacing the recipe with 'this is not made fresh so much nowadays'. After that, making the sauce for the turkey seems a doddle!
