How much do you want to spend?
Does he have any hobbies?
Depends on how much you have to spend and what sort of things he likes to do and whether as a family you put more store in thecost or the thought of the present or have gone beyond presents and just take themicky out of each other with novelty gifts.

Buy him a copy of Killing Floor by Lee Child, and when he wants the next ones, you can buy him one a year for the next twenty years or so.

Im Thinking to spend somthing like 500$ US for this present. My dad loves Wood Whittling and to play on the guitar sometimes...

A bag of wood shavings and a pot of glue, he could make a banjo.
A set of good quality wood carving chisels, preferably from Sheffield, UK.
500 bucks would get him a pretty nice new (or used) guitar unless of course he has a decent one already. I'd recommend a Mexican Telecaster if he plays electric.

That's a lot of money to spend on one birthday present. Have you asked him if he wants anything? If he drinks, I would guess that a bottle of wine, whisky, whatever would be welcome.
If he drinks, I'd recommend (for that money) an entire case of Patrón Anejo :-)
