First any coffee instant or grounds oxidise in air which damages the final favour. Always keep in airtight container and keep cool (in the fridge), some even suggest keeping coffee in the freezer. It is also best to buy smaller jars of coffee the huge ones you get now will be quite different as you finally get to the bottom of the jar.
Boiling water scolds the coffee realising bitter oils which greatly changes the taste. You notice this even more with proper coffee grounds. If using a machine over presure of the water/steam will also damage the coffee in the same way. Use water off the boil. A coffee made well (correct temperature and presure) will be indicated by a good crema on the top of the coffee.
