ive been told that if you put coffee in a cup then add water then milk - the hot water scorches the coffee granules. So the the coffee can taste differently than if u added the milk before the water! is it true??

Yeah, it definately tastes different. A mate of mine says adding hot water first burns the coffee, but i still like it that way.
I think the correct way to make coffee is with water which is just off the boil for best results.  Tea, on the other hand, needs water that is actually boiling in order to best infuse the leaves.

Apparently using freshly boiled water makes coffee taste bitter.

 

 

My husband lives on black coffee, no milk, no sugar. He always pours in boiling water, then adds a little cold. I thought most coffee houses use boiling water.
That's how I drink my coffee smudge!  My step-mum does too.

Black coffee drinker here, too. If drinking instant, I either add a little bit of cold water (about the same amount as you would milk), or wait a few minutes for the kettle to cool slightly.

I can definitely taste scalded coffee - and hate it !!

Ditto smudge+nat, my hubby drinks coffee and only coffee and he sleeps so well!!

Yuk natalie_1982 - It always intrigues me how he can drink it like that. I only enjoy the occasional cappachino, sprinkled with chocolate on top. You can't beat a nice cuppa tea though.

It's amazing isn't it Fina, my husband sleeps like a log too.

Im an insomniac too smudge, only since the menopause.I get quite jealous when my lot are sleeping whilst Im wide awake.
Snap FINA - I often get up in the middle of the night, go downstairs & read. When this happens, it's such a pain being so tired in the morning, when everyone else is bright & breezy - uurrgg!.
My BF only drinks black coffee so I put a little cold water in first and then the hot - this way it is warm enough to drink and doesnt burn the coffee

This is true although it is possible to 'damage' coffee in a number of ways. First any coffee instant or grounds oxidise in air which damages the final favour. Always keep in airtight container and keep cool (in the fridge), some even suggest keeping coffee in the freezer. It is also best to buy smaller jars of coffee the huge ones you get now will be quite different as you finally get to the bottom of the jar.

Boiling water scolds the coffee realising bitter oils which greatly changes the taste. You notice this even more with proper coffee grounds. If using a machine over presure of the water/steam will also damage the coffee in the same way. Use water off the boil. A coffee made well (correct temperature and presure) will be indicated by a good crema on the top of the coffee.
