What's the difference between a Nobel Prize winner, (in any category) & a Nobel Laureate?

There is no difference. The word laureate comes from the tradition in Roman times of decorating high achievers with a crown of laurel leaves. In modern times, Nobel Prize winners are not actually so crowned, but the laurel-related word has remained to describe them.
