Just wondering, in curling what happens if one of the brooms hits the curling stone when they are playing. Do they play the shot again?

No. The stone is removed from play.
Similarly, what happens if a curler touches any stone either while it's moving or stationary?

The actual course of events is dependent on if either side loses or gains by the movement of the stone. It might simply be replaced or not.
