When you have the photo at full size (filling the screen) there is a trash can symbol top right. Tap this and it will be erased.
Alternatively when you're in camera roll (small pics of each image) there is an arrow pointing right out of a box, top right. Tap the image/s you want to delete and touch the delete button.

thanks but my friend suggested the trash can thing (she has an IPad 1 ) but on the 2 there is no trash can ? thank you for your reply anyway though : )
Well there is on mine. Touch the photo when the pic is in full screen view and it will appear.
The trash can show on the top right of the photo.

well unless i'm blind there is no trash can in any corner of my screen and no option whatsoever to delete the photos..............its no big deal - its just that i bought it off a friend who only used it once but its got her holiday photos on and i thought it would be simple to get them off? stuck wtith them i guess cheers
Are you sure it's a 2?
As far as I can tell from my iPad 2 you can only delete photos that you have taken with it or imported to it using the camera connection kit, photos that have been added via iTunes have to be removed via iTunes.
