is it possible to set up one of the F keys along the top of the keyboard to save me typing out the same text time after time?

Yes. These are known as macros.

if you are using word then you can use the autocomplete feature to do the same thing.

I used to have word set so if I tpyed "docend" it would change it to the normal last paragraph that I put on the bottom of letters

you can also use 'autotext ' and save typing whole paragraphs each time
