When you want to copy, highlight the text and then press 'ctrl'. Keeping ctrl pressd, hghlight the next bit of text you want, etc. Then copy, either by 'edit copy' or by pressing ctrl+C, then paste into your new document.

why not copy the lot then cut what you dont want?

It all depends where you are trying to copy from. if the 'keep ctrl pressed while selecting' doesn't work (like from a webpage) you may need to copy the whole text and paste it in a new Word document first. Then copy & ctrl etc.
If you use a clipboard history manager then you can do all the copies first before pasting them individually where you want.
