windows live mail XP operating system

since installing this all emails I saved copies of(in other folders) now are associated with Livemail.,previously they opened in Outlook express.I now want to remove the live mail installation,but before doing this want to be sure I can still open them.How do I change the settings to do this?or if I simply uninstal Livemail will the saved files revert to opening in O.E?
Any help appreciated.
