The time shown on a text message is NOT the time on the phone which sent it, OR the time on the phone which receives it, but the time stamp applied by the SMS system of your network operator which processed it.
The systems which handle SMS message and stamp the time on them have their own clocks/time setting. These are set to UTC (Universal Time Constant) which is also GMT (Greenwich Mean Time). Right now this is an hour different to BST (British Summer Time) hence the hour difference shown on your texts.
