In MSE i've got the following sections -

Home , Update , History , Settings

The only date I can see is under Update , where it says '' Definitions created on ( then a date ) ''

Would that date be the date when the last scan was run ?

Basically when i'm not around to see the scan running - what i'm after, is to check that a scan was run and on what date

Nope... that date is the actual date of the definitions file that replaced the last one. This date would normally be very recent.
Check Scheduled tasks in Control Panel, then check in the program .. I would think there is a setting for regular scans.

I've scheduled the scan in MSE itself , but when it carries out the scan , it doesn't say/confirm that the scan was done .

Do i need to set up the scan in scheduled tasks , as well ?

In other anti virus products i've used - you got a confirmation that a scan was completed , and the date it was done
No, you dont do that. Thought you may see the details there.
I would have expected it displayed on the front of the panel when you open it. Bad that.
