If you "delete files, delete cookies" and "clear history" then you'll largely erase what I think you're referring to as "google history".
Also, you can also download software that will do this more convincingly for you. I find "Tracks Eraser Pro" quite good although I'm sure there are free equivalents.
You might also mean the way input fields (like Google's search field) remembers everything you've searched for. If you want to delete individual words/phrases you've searched for previously, open Google in T'Internet Explorer, double-click in the search field (or type in the first few letters of what you want to delete), hover over the naughty word/phrase you don't want so that it highlights and then press Delete on your keyboard.
If you want T'Internet Explorer to stop remembering what you type into webpages for good, go to Tools -> T'Internet Options -> Advanced [Tab] and under "Browsing" at the bottom, uncheck "Use Inline Autocomplete".
