My father lives in Cashel in Co. Tipperary and that's a beautiful part of the world. It has historical merit so aimed at tourists. All the towns are fairly scattered unfortunately so the best thing to do is hire a car to take in any nearby attractions, otherwise you will be left twiddling your thumbs. Co.Wexford is also really nice. Try these links for further info:

Killarney is a lovely base to stay in.A very lively Town by night and day.A trip round the ring of Kerry is wonderful either by your own transport or by coach.lots of lovely restaurants.Bed and breakfast is available very easily in beautiful bungalows and houses.we have never had a bad one and have never booked in advance. We have been back twice and would go again. The children would love the Horse and trap rides.Recommend the Gap of Dunlo trip.Hope that will be of help.
Wicklow - Glendalough, Cork, Bunratty, Clare - Gap of Dunloe, dont forget Dublin, Malahide is nice on north side of the city.
A word of warning, there are very few motorways so it takes a lot longer to get anywhere. Not much traffic but mainly B roads.Allow lots of travelling time.
