But the main town, and capital, is St Helier, is on the east and I would suggest you stay there. It is only a few miles from the airport and a bus runs direct from the airport to St Helier.
The main bus station is in St Helier and it is easy to get round the island if you are based there.
I stayed at the Merton Hotel a year or so back and it was wonderful. If you are going out of season you may get a decent price.

There are loads of web sites giving lists of hotels so why not search the web, here is one site

If you click on this link below it creates a Google search for "hotel Jersey"
http://www.google.co.uk/search?hl=en&q=hotel+j ersey&meta=
Part way down the page will be a map with various hotels marked on the map (A,B,C etc)
You can click on the title line ABOVE the map (Local business results......) and it gives you a list of all the hotels.
There are about 4 or 5 pages of them.

Glad I could help.
While I have only been there once, it was for a week, and I did a lot of research before I went.
If you want any suggestions of where to go in your 3 days then just ask.
The reason I suggested St Hellier is that while the rest of the island is lovely it can be rather isolated and you may find yourself in a lovely hotel but nothing else nearby (unless you hire a car).
St Helier is a fair size town with plenty to do, lots of shops and places to drink and eat etc.
It is also right on the coast so easy to go for a stroll down to the sea front.
And as I said, all the buses set off from there, so you can get to anywhere on the island from St Helier.
