/// I'd go Omelette, with Spanish Onion some Bacon and Tomato on the side with buttery toast. ///
Interesting your reference to 'Spanish Onions', I haven't heard them so described for years, all I see now are 'Mild Brown Onions'.
It is the same with 'Spring Onions', don't they now call them 'Salad Onions'?

AOG.
Spanish onion: has a similarly coloured skin to a yellow/brown onion, but is usually bigger, as well as sweeter and milder - good for omelettes, salsas and stir-fries.
So it's probably a "marketing thing". Over here they are sold as Spanish Onions.
Salad onion?, spring onion is the marketing term here.
