I was at Borough Market (London) on Sat and bought some Arbroath Smokies for the 1st time. Ive heard of them but thats about it. I saw them when i bought them, they're wrapped in my fridge right now, what are they, they looked like mackerel?


More importantly, is there a classic way to serve them?

Just grill 5 mins, lift out backbone and eat with good brown bread and butter whilst hot...


Also makes a good pate - mix with creme fraiche and pepper, twist of lemon; use in terrines; eat cold with salads; use in kedgeree; make into cullen skink (recipe: http://www.scottishrecipes.co.uk/cullenskink.htm ) but best of all just eat hot with the fingers from paper as a proper meal.

Also known as "the drunk man's breakfast" smokies are already fully cooked by the smoking process. As nickmo suggests, they're nice as part of a seafood salad. Just skin them and lift out the backbone.
Oh! Should have said...they're haddock, a low-oil fish.
