Do you have a slow cooker? I do mine in a wee drop of cider and water with mixed veg. Very tasty.
I would just fry them and make a sauce to go with them.
Make some sage and onion stuffing. Put the chops on a greased baking tray, cover them in the stuffing, dot with butter. Stick them in a moderate oven for about 75mins.
Put on a baking tray, cover with foil and bang in the oven 180c (Gas4) for 45 minutes.Dress with whatever you fancy.
I fry them for short while and put into foil. Then fry onions and apple and put in foil. Then make gravy using the frying pan and again put in foil. Then heat in oven 180 degrees for about 1/2 hour.
I would bash them with a meat tenderiser (or a rolling pin if you haven't got a meat tenderiser) - dip them in beaten egg, then breadcrumbs, then grill or fry them.

If there's a thick rind on them, trim it off because no amount of bashing will flatten it.
Braise them with cider or white wine, onion, apples etc - if not braised they'll be tough as old boots.
Pork is only tough if you overcook it. Most answers on this give far too long cooking time. I would just grill them as they are and have with veg and potatoes. Just 4 or 5 mins a side no more.
Alternately get one of those flavoured ' cook in bags' the barbecue one and the Piri Piri ones are good for pork. Then just follow in cooking instructions.
