I was an assistant/relief manager for bass taverns for quite a few years before my kids came along. All the staff had to do the basic food hygiene course as we served the food as well as drinks. I don't know whether anything like this is what you're looking for

Otherwise any brewery could give you some info perhaps.

check out www.food.gov.uk they will have all the important information, including links and advice on courses you can take (there is a one day course usually held at your local college that all food handlers must take). Or you can google 'food hygiene' and 'health and safety regulations'. Another good source of information is the Small Business Gateway (try googling them too) although I'm not sure if they are just Scotland based. Call them, tell them what you're about to do and they will send you lots of factsheets with all the info you need. Good luck, I'm jealous!!
