I have invited a friend for a meal but have just realised that they are vegetarian. I'm no great shakes at cooking at the best of times so am looking for a simple but tasty meal. Any suggestions very welcome. Thanks.

Do you like Indian food? In which case there are oodles of options.

You haven't said if it is lunch/supper or dinner.

Soup, quiche with salad, tortilla and salad, mezze.

A big platter of antipasti and breads.

So much to choose from.
Spinach and ricotta cannelloni?
pesto pasta
Stir fry with noodles.
Pasta of your choice, garlic and herb philli cheese, broccoli and mange tout.

Cook pasta, blanche broccoli and mange tout, warm cheese in micro with a little milk and mix together.
Veggie curry and rice, with some Bombay potatoes and naan
What were you going to cook before you knew they were vegetarian?
You could always substitute the meat component for a shop bought veggie option and do the same salad/vegetables you were going to do. There are so many tasty veggie things in supermarkets these days.
If you wanted to do a spag bol or chilli, use quorn mince instead. Or buy some veggie burgers, there's usually loads of choice, and serve in a bun with salad and wedges. And buy in a nice pud, or a mix of fresh berries in meringue nests with cream.
The person is coming to enjoy your company, as long as you serve up something edible without meat I doubt they'd be bothered or expecting a gourmet meal.
Wild mushroom risotto with tomato and lentil dhal.
NoMercy - Maggie states she's not very good at cooking so may find your ideas a wee bit advanced.

Thanks for all you suggestions, sure I'll manage one or two of these. Will experiment before friend comes for supper.

Vegetarian haggis? I can hardly credit that. Why, it's like non-alcoholic beer.
This pasta bake couldn't be easier. make plenty of it and serve with fresh green salad and a glass of red!

Islay, they're two very simple dishes with not many ingredients.
Thai green curry.

The paste you can buy is acceptable but making your own is much nicer and very easy, if you have a blender (I use a mini blender)

Just fry the paste, add in veg and a can of coconut milk....simmer.
