Does Anyone Know Why ?

I made a cake today, sponge base, raspberry mousse and red fruit jelly on top. All made with fresh ingredients. But when I made the mousse with whipped egg white folded into whipped cream and the raspberries , which I had simmered, blitzed and sieved, the mixed with gelatine, it split. I have made this cake a few times and it didn't happen, any ideas why ?

Hi Sam, the only thing I can think of is temp of any of the ingredients when you folded them together? Did you wait for any of the heated ingredients to cool enough?

Yes I did Elina. I am thinking maybe there was too much raspberry. Never mind I will try once more, when I am in the mood. It all got eaten anyway, nobody complained !
