In an attempt to prep as far in advance for NYD as possible, I would ideally like to make these in advance, freeze them and then cook them again on the day.
We're doing chicken with all the trimmings and a beef Wellington. For the purpose of simplicity I'd like to get these made before hand. I twice cook the roasties, parsnips and pigs in blankets already and they turn out pretty damn good every time.
why don't you try it next time you make them? Freeze one and see how it goes. That'll take the worry out of whether it will work or not for the special day
