I don't seem to have too much luck with figs either which is infuriating because I have neighbours who seem to get trees full of them without trying.
What I've learnt is that figs can't often ripen properly in Northern Europe in one season, you should remove the first figs that appear in the early summer and you'll get a seperate crop of figlets appear in late summer.
Leave these on the tree to over winter and they'll ripen the following year.
Apparently they crop a lot better if their roots are restricted and the figlets tend to drop if they don't get enough water.
However I always seem to loose most of the figlets however well or badly I water - sounds like you're doing better than me
