It comes from the name of a local stew, lobscouse, which in turn comes from the German word Labskaus, a stew eaten by German sailors.

.....and that's why people from North Staffordshire should be called 'Lobbies' as they took the same recipe but chopped the 'scouse' bit off and called it 'Lobby'.

Another little bit of connected trivia.

Scouse should have meat in it, but very often people could not afford to put the meat in. The vegetable version was called 'blind scouse'.
