low fat banana cake

Just thought I'd share with you this easy recipe for a fabulous low fat (9% fat) banana cake.

 

1 cake - 10 people

 

2 eggs

200gr mashed banana

1 cup of semi skimmed milk

150gr sugar

150gr plain flour

2 tsp baking powder

 

Whisk eggs and sugar thoroughly with a hand mixer so it becomes white and fluffy.

Mix flour and baking powder in a seperate bowl.

in a seperate bowl mash bananas and add the milk.

Alternating turn the banana mix and the flour mix in the eggs.

Put the mix in a greased baking tin and bake in the oven for about 50mins on 175 degrees.

Pierce the cake with a skewer to see if it's baked. Leave it to stand for 15mins before taking it out of the tin.

Once cool sieve some icing suger over it and serve.

You can add some chopped plain chocolate to the mix if you want choc chip banana cake but then obviously it's no longer low fat.
