Pie n mash

Just watched an old ep of eastenders and they were eating pie/mash. Had this once before and loved it but how do you make the liquid/ sauce what ever it is???? Thanks in advance.

For more on marking an answer as the "Best Answer", please visit our FAQ.It's just (according to my mate B, who was brought up in the East End years ago) a thinnish, white sauce flavoured with loads of finely chopped parsley. If you eat this traditionally, you need the pie, the mash, a portion of stewed eels AND the 'liqour' (or sauce) all served together in a deep bowl. I understand the correct way is -mash, pie, eels on top of pie, sauce round, with a little bit over the top! There has to be loads of sauce, apparantly. If you live anywhere near to Bognor Regis, we have a pie,mash and eels shop here, in Queensway. B reckons it's the nearest thing she's tasted to authentic since she left Tooting in 1970.
And you eat it with a spoon and fork,you don't use a Knife,(ever) you also put a load of vinegar over it lovely grub, warms the cockles up a treat, if you don't want the eel though don't worry about it,they are an aquired taste, there is a good Pie and mash shop in Tower Bridge road (well used to be) don't know if it's still there and one at the end of shepherds bush market (cookes) go for it ali,put hairs on your chest and up yer nose !!!1
Kim, looks like I'll be hopping on the 700 with my mum, to visit the Pie & Mash shop.
My mum used to buy the live eels, when we lived in NW London, and would make a 'stew' with them, creamey mash potato and bread and butter...Yum Yum!!
Slippery little b****rs, used to end up with cuts all over my hands!
Something about the pie, (that you could never buy anywhere else) was just so perfect with the liqour.
Manser's were going when my mum was a young girl - and they're still going strong - where ray mentioned.

Liquor for pie and mash:-
25 g Butter (1 oz)
25 g Plain flour (1 oz)
300 ml Water (10 fl oz)
4 Tablespoon Chopped fresh parsley
Salt and freshly ground pepper
1 Teaspoon Malt vinegar, optional - but should be in it to be a 'propa 'sos . .
Melt butter in a saucepan, add flour and cook for 1 minute.
Gradually add water (could use a chicken stock). Bring to the boil, stirring continuously. Add parsley and season and add vinegar if using. (course you are . . . )
Serve over pie and eel, a good mash potato, minced beef pie etc. etc
