Sorry rufio - Scarlett has it right. The "i" serves to soften the "c" into a "tch" sound, and isn't pronounced. It's quite definitely "tchabatta". And "bruschetta" is "brusketta", because the "h" hardens the "c" into a "k" sound. These pronunciations are of course approximate - you need to give them a bit of Latin flair and zing to make them sound truly Italian. Parliamo un poco Italiano........
