E-mail font and layout

When I'm typing an e-mail, the default font used is Arial, size 10. I often have to draft lengthy e-mails for work which I like to set out nicely so it's easier to read by spacing out paragraphs and using bullet points and numbering etc. However, when I send the e-mail, all this formatting goes to pot and the paragraphs all bunch up together, the font changes to Times New Roman and the bullet points and numbering often disappear. Can I do anything about this? (I don't have an IT dept I can ask about this; we use external IT support people who take forever to get back to you.)
