All odd clues (23 is odd) have a "manipulated" first part and an ordinary second part. The second part here is "I dreamt about head waiter" which gives the answer "maitre D", so we ignore that part now

This leaves the first part "Working during male party one
day in Berlin" This gives the answer "SONTAG" (setters error for Sonntag - one day/Sunday in Berlin/German) and is parsed by "on"(working) "inside" Stag (male party)

Then you need to maniplate this by anagramming it with an extra W (23rd letter of the alphabet)
Sontag + W gives an anagram of TOWN GAS which is then entered in the crossword.

Thanks jj109. Just shows that the initial post (which was not even given correctly) needed to contain full details of letter count and special instructions.

danny- the clue was wrong for the first part. It should say WORKING not WORK. I know the second bit for Maitre D isn't relevant here- I thought I'd covered that in my reply to mamyalynne but clearly I didn't make myself clear
