Do you know of any ''really good'' recipes that you've tried & tested?

I don't want 'cut & pastes' from Google, I want to know that you tried, and liked it ...

Very simple one, but very tasty...

Sliced courgette, saut�d with slithered almonds till both are golden brown...the combination of slightly gooey veg married to crunchy nut...enjoy !!!

Of all the recipes for courgettes, I tend to prefer Oscar Wilde's...
Cut the courgettes into 1/4" slices and sprinkle them with a little salt. Cover them with a tea-towel and leave them aside for 45 minutes. Then throw them away! ;-)

I slice courgettes into matchsticks and fry with onions (or shallots) in a little butter. Cook some pasta separately and add this (farfalle is good), some parma ham (shredded) and some creme fraiche. YUM YUM. Enjoy...
When you've got the barbie going, slice courgettes lengthways into quarter inch slices, brush with olive oil, season with salt and pepper and grill until soft, dress with more olive oil and balsamic vinegar. For extra gorgousness you could blacken some of the long red peppers on the BBQ, leave in a plastic bag for 20 mins, skin them, remove seeds, slice and add to the courgettes. Lovely hot, warm or cold.

Just looked in, and noticed I put 'slithered' instead of slivered...

Courgettes au gratin

3/4 lb courgettes
sml carton double cream
3-4 oz cheese, grates
1-2 eggs

Wash and cut off ends off courgettes and then slice. Place in boiling salted water for 5 minutes. Drain. Beat up eggs, add a little milk and carton of cream. Mix well, add grated cheese and mix again. Grease a flan dish and put in courgettes, pour mixture over and bake in oven, gas 5-6 for 45 mins.

Delicious with roast chicken or something similar.
I must make it clear that I haven't tried this but, i intend to this year. Saw this on a cooking programme. Take the courgette flowers and dip them in a tempura batter (I have made this. Cold sparkling spring water, cornflour and a little plain flour). Dip the flowers in batter and deep fry until the batter is golden and crisp. Sounds lovely.
Courgettes can sometimes be a litle indigestible and mushy if you boil them, but cut them in two lengthwise, brush with a little oil and cook them on the griddle. It removes any surplus moisture in the vegetable and slightly caramalises the natural fruit contained in the flesh.
N-N: - Try a 'One Ball' courgette next year....seed online if you haven't got a local supplier. Easy to grow and a bit different for the table....

Supper for me tomorrow (cos I just happen to have one to scoff from the farm shop )- 1halved 'One Ball', scoop put the flesh and saute in butter with diced onion, garlic, salt & pepper for 3 mins. Combine some feta cheese with a some grated emmentale, paprika, a little flour and a beaten egg with some herbs - dill or thyme. Fill the shells, top with a little more cheese and paprika and bake/roast for 20 mins or so in med. oven..

Nice crusty warm bread with that and a little green leaf salad and a glass of fresh labneh . . . .
