Yellow And Orange Peppers

I have a orange pepper and a yellow pepper, will they eventually ripen into a red pepper and an orange pepper or will they deteriorate before then?

Probably deteriorate.

The yellow pepper was still slightly green when I bought it but it has now become truly yellow.
Definitely deteriorate.
I had a red, orange and yellow one left from Christmas and none had changed colour, just gone a bit wrinkly so I did a roasted veg thing with them and other veg, yesterday. Cracked a couple of eggs on top after they were almost cooked. Very tasty.

I'd better do something with them today then. Beef casserole, I think.

Once off the vines the color change is likely to be minimal, before the wrinkles set in.
You could always stir fry them as a side dish.
sounds good idea Tilly2 at least it can be frozen then.
Or,if you wish, you could de-seed them, cut them into strips and freeze.
