"TheDevil Have you bought this pan yet?"
Yes I own the pan. I love it. I use it for meats and veg, especially if I want to finish em off in the oven or keep them hot. Best thing is lamb cop in it.

It's also really good for camping! Care is easy in my opinion, after you use pan and eat meal, wash it first straight away with warm soapy water or water and salt if you need some coursness then leave on the stove top that you just used to totally dry off. When it does rub some oil in there and still, leave it on the stove top for the oil to seep in. Then just let it all cool down.

I also recently acquired a cast iron policlin coated pan that I can use on the stove top or in the oven. It's like a really shallow casserole dish, so I can fry in it also. It's fantastic I love it. I'll be making Creamy Tuscan Chicken in that.

Yes these pans are heavy but they'll last me for life. Quality kitchen wear and suitable for any appliance, be it an open flame or a stove top.

My porcelain cast iron pan comes with a 20 year warrenty.
You're just showing off now, TD.

Tilly I honestly did wonder what I could use the ribbed pan for other than meats and veg!

I've never heard or seen someone use one to make a sauce.

I only spoke about my porcelain pan because other pans were mentioned, and I just wanted everyone to definitely know that out of all the pans, my pan is the best. ;-P
I have a ribbed, cast iron skillet which I use for steak, chops and fish. It has a pouring lip at one side and anything made with a sauce would just dribble all over the hob.
...I do not have a porcelain pan. :-(

At the end of the day it's a bloody heavy frying pan or shallow Dutch oven that can go in the oven. The ridges just make a steak or other meat look barbecued imo.
One recipe I use a lot for my cast iron pan is lamb shanks, chick peas and chorizo by Phil Vickery.

That looks nice retro

Tilly they're pretty good but not necessary. But I do love mine! Bloody heavy.
That's why I don't have one, TD. My hands are not as strong as once they were.
TD sorry I'm confused: In the OP you say you have a pan, then you say this
//I am going to buy a normal cast iron because I only have one with a griddle and I really want to make Creamy Tuscan Chicken //

then you list off how many high end pans you already have....
I've a good recipe for porky pies if you want..;-)

and puh-leee Ive been cooking longer than you've been on this earth as have many on here, tried every pan going, and am quite aware, thanks, how to clean and store them lol!
Lol APG
I think Ken Holme taught us all how to season pans and woks long before The Devil was born. :-)

"OP you say you have a pan"

A griddle, yes.

"I am going to buy a normal cast iron because I only have one with a griddle"

Yep, a normal IE, not one with a griddle.

"then you list off how many high end pans you already have..."

Then I explain how I have ONE that is cast iron ceramic coated.

The problem is?
