Leaf Beet.

Most of my leaf beet has bolted. Is it edible or should I start again?

Possibly the warm weather of late has caused them to get to maturity before their time. I would scrap them and start again, preferably with a bolt resistant variety, seeing that germination is fairly fast.

Would not know about leaf beets, but then I looked up for bolted rocket and waterceess it seemed to suggest it would be more bitter and therefore unpalatable.
Not that I'd eat either anyway.

Try them, when my chard bolts it tastes even better. If you don't try them you won't know.
Runaway beets and chard etc are known as 'Usains'....as they have bolted.
Definitely compost them and start again.
