...so big they present a threat to other creatures. When they're relatively small how do they survive predation when their colour must make them stand out in their new environment?

Well, some do survive and some don't.

We have some here about 15" long, in a very large ex mill lodge.

Maybe they're put into waters where there are no predators.
Surely we've all seen carp a foot long? That's what goldfish grow into when they are out of the bowl. Not sure about their colour putting off larger predators; maybe larger predators aren't used to orange nibbles.
