When I were a lad (40 years ago) all the eggs in the UK (by and large) were white also. Brown eggs were something of a novelty. Until - for some reason - it was decided they were better than the white ones.

brown eggs are laid by brown hens and white eggs by white hens!! simple as that

Its nothing to do with the colour of the hen actually, - its their ear lobes!! Its true, if they have white ear lobes they lay white eggs, most of the others lay brown but some lay green
