just over two years ago before I was cast to the boonies I recall an ABer posting a recipe which was Indian Spiced Mince with Rostis.. I duly copied it and filed it in my numerous recipe folios.
The memsahib woke up this morning and decided to cook it for this evenings meal.
It was, as always, heaven on a plate. Thank you that ABer for that easy, simple tasty repast.

It always was an awful copy. If you can't decipher it I will be happy to write it out freehand after watching the 1010 ITV news that has just started. Let me know how you get on with this image.

5 stand by suppers indian spiced mince "Mitzie Wilson"

Serves 6? Prep 5 mins Cooking time 40mins
500 grms Beef Mince
One onion
2 crushed cloves of Garlic
2 Tbls Madras curry paste
1 Tbls Mango Chutney
450 grm Frozen ready made potato rostis ( we always use Lidls Triangular frozen Hash Browns as our ppreference

Method
Dry fry the mince in a large pan until browned.
Add the onion and garlic and fry for 5 minutes until softened, then add the curry paste.
Stir for one minute and then add the Mango Chutney and tomatoes.
Bring to the boil and then simmer for 5 minutes
Pour into a 1.5 litre oven dish and top with overlapping rostis (or Hash Browns
Bake at 200C or Gas Mark 6 for 25-30 minutes until the hash browns are golden.

Yes DTCwordfan. My bad. The tinned tomatoes are part of the recipe. Somehow they ended up at the bottom of my typed recipe. :-)

My wife is all for easy peasy as well. That's why she decided to cook it for us yesterday. First thought in the morning when opening her eyes was 'What's easy peasy to cook today and have we got the ingredients'

I need easy peasy at the moment, one pot for meat or whatever, one for rice, pasta or spuds. Bending to use the oven is a nono.
That sounds really tasty, retro. Must try this some time!
I remember you gave me a recipe for a curried dish a few years ago, with minced lamb. I found the recipe scribbled down on a piece of paper at the back of one of my drawers.. :-)
