I have been using two SIM cards. Is it possible to port one number to the other SIM card (I intend to ditch the one SIM card)
I know it is possible to port numbers to new SIM cards, not sure about SIM cards that have been in use for a while.

I suspect unlikely as it is the SIM that defines the number. It's easier to produce a new one than change an existing one. And you already have a SIM with that number.

What is it that you're really hoping to achieve that can't be done using the existing SIM ?

The first SIM is the phone number I have used for many years and want to keep. It would cause a lot of problems to change it.

The other SIM has a much better plan (cheaper, more data and calls and better signal at home). I no longer need two phone numbers but this better plan is no longer available to new customers.
I suspect only your service provider can say. It'd likely mean a new SIM in any case, but they'd need to agree the account settings first. I'm no expert so perhaps await more answers before you decide to negotiate ?

Thanks, OG. If it can't be done I'll just get a new SIM from provider number 2 (better signal) provided they have a plan that suits my pocket, then I can my favourite phone number over to that.
